Leggo-My-Keto Meal Waffle!

Leggo-My-Keto Waffle ✋


What you will need:

  • A waffle iron
  • Non-stick cooking spray
  • 4oz cream cheese
  • 4 eggs
  • 2 servings Keto Meal
  • 3 tbs heavy whipping cream
  • 1/4 tsp cinnamon
  • 1 tbs coconut oil
  • 1 1/2 tsp baking powder
  • Toppings (we chose ChocZero sugar-free syrup!)

+ Optional: A blender! We found that blending these ingredients not only made things easier, but clean-up was a breeze!


How to make it:


Plug your waffle iron in, set it to medium heat, and be sure give yourself some room- waffle irons are notoriously messy if overfilled (am I the only one that does that?)! While that's heating, we'll get our ingredients together.

As I mentioned above, having a blender of some sort to blend your ingredients will make your life 100x easier. However, it is not required! If using a blender, you can simply measure everything out and toss it in, no additional steps required. If using your super human arm strength, I would suggest adding everything to your mixing bowl with the exception of your cream cheese. Take the cream cheese and, in a microwave safe dish, heat it in the microwave for 15 second increments until your cream cheese is more pliable (you will thank me for this). Lastly, add the cream cheese into your waffle batter and get to mixing!

Before you spray your waffle iron, I suggest letting your waffle mixture to sit for 30 seconds to a minute. This allows for your waffle batter to rise a bit and thus will give your fluffier waffles (your girl loves a fluffy waffle). Once you can't wait any longer, spray your iron and pour your batter into it. You'll want to pour an even amount into each portion of the iron until full. Close your iron and follow its specific instructions on how to cook! Tip: Let them cook 30 seconds-1 minute longer after the iron indicates they are ready. This will allow you to have crunchy waffles on the outside, but soft waffles on the inside, YUM! 

Feel free to dress them with whichever low carb/keto toppings you'd like. This day we chose sugar-free syrup, but next time I'm thinking homemade whipped cream and berries! Enjoy!
