Parmesan Zucchini Fries

Serves 8


Prep Time: 5 minutes

Cooking Time: 20 minutes



 2 eggs

4 medium zucchinis, ends removed and sliced like fries

4 ounces of hard parmesan cheese, grated with a Microplane zester

1 teaspoon of sea salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika



 Preheat oven to 400 degrees Fahrenheit. 

 In a bowl, mix grated parmesan, sea salt, black pepper, garlic powder, and smoked paprika until well combined.

 Crack eggs in another bowl and whisk.

 Add sliced zucchini and toss in the egg mixture until the zucchini slices are coated in egg.

Arrange coated zucchini on a baking sheet lined with parchment paper and cover with the seasoned parmesan mixture.

 Bake in the oven for 20 minutes, flipping after 10 minutes.
