Prep a batch of these skewers to take your healthy meal plan to the next level! These are fantastic served at a group setting, and also made to enjoy throughout the week!

Wooden or Metal skewers
1 pound of boneless & skinless chicken breasts, chopped in bite-sized pieces
4 tablespoons olive oil
1 tablespoon fresh lemon zest
2 tablespoons fresh lemon juice
1 tablespoon raw apple cider vinegar
2 teaspoons sea salt
1 teaspoon black pepper
½ teaspoon garlic powder
1 teaspoon dried Italian seasonings
Pat chopped chicken breast dry with a paper towel and set aside.
Whisk the remaining ingredients in a mixing bowl until well-combined.
Marinate the chicken in the vinaigrette for 15 minutes, or up to overnight.
Thread each skewer with the chicken.
Place in the basket of your air-fryer and cook for 10 minutes at 375 F (190 C). Open up the air-fryer and check to see if the meat is cooked through (or 165 F/74 C). If not cooked all the way through, close the lid and cook for an additional 2 minutes.
Remove from the air-fryer and let cool for a few minutes before serving.
Serve between 4, storing any leftovers in an airtight container for up to 3 days.
