Almond Butter & Sage Chicken Salad

4 tablespoons olive oil
2 tablespoons almond butter (any variety with only almonds and salt as ingredients)
1 teaspoon sea salt
½ teaspoon black pepper
1 teaspoon dried sage
1 tablespoon coconut aminos
6 ounces of leftover chicken breast, diced
2 tablespoons fresh cilantro
1 cup sliced cucumbers


Mix all ingredients except chicken, cilantro and cucumbers until very well-combined and a thick sauce has formed.

Mix in diced chicken breast.

Serve between 2, with fresh cilantro and sliced cucumbers, storing any leftovers in an airtight container in the fridge for up to 3 days.
