Baked Cod with Veggies & Salsa

Serves 4

This is an easy sheet dinner that can be whipped up any night of the week. Keep cooking fats stocked in your pantry and proteins and veggies in your fridge to make sure you can get a healthy meal such as this one on the table in no time!

Prep Time: 10 minutes
Cooking Time: 30-35 minutes

1 large red bell pepper, seeded & sliced
1 large green bell pepper, seeded & sliced
3 cups cauliflower florets
2 tablespoons olive oil
2 tablespoons ghee, melted
1 teaspoon sea salt
½ teaspoon black pepper
1 teaspoon smoked paprika
1 pound of cod filets
1 tablespoon olive oil
1 teaspoon sea salt
4 tablespoons jarred or fresh fire-roasted salsa
2 tablespoons fresh cilantro, minced


Preheat your oven to 350 degrees Fahrenheit.

Toss red and green bell pepper slices and cauliflower in olive oil, melted ghee, sea salt, black pepper and smoked paprika. Spread evenly on a baking tray lined with parchment paper and roast in the oven until very soft, about 20 minutes.

Increase the oven’s heat to 400 degrees Fahrenheit and remove the veggies.

Arrange cod filets over the veggies and drizzle olive oil over them and sprinkle with sea salt and return to the oven until they are cooked and flake easily, about 10-15 minutes.

Remove from the oven and garnish each filet with 1 tablespoon of salsa and minced cilantro.
