2 cups cherry tomatoes
3 garlic cloves, minced
1 whole block of feta
2 tablespoons olive oil
1 teaspoon sea salt
½ teaspoon black pepper
1 tablespoon dried Italian herbs
3 medium zucchinis, ends removed & shaved as “ribbons”
1 14.5-ounce can of tomato sauce
5 fresh basil leaves, minced
Preheat oven to 400 degrees Fahrenheit.
Add cherry tomatoes and minced garlic to an 8x8” oven-proof baking dish and place feta cheese on top, centered on top of the tomatoes.
Drizzle with olive oil and season with sea salt, black pepper and Italian seasonings.
Bake in the oven until tomatoes are soft and the cheese has melted, about 25 minutes.
Remove from the oven and serve with canned tomato sauce and zucchini ribbons, garnishing with fresh basil.
Serve between 4, storing any leftovers in the fridge for up to 5 days.
