Beef Curry Bites with Yogurt Sauce

Serves 4

These little bites are packed with big flavor thanks to lots of spices and fresh herbs. We used ground beef, but feel free to use whatever ground meat you have in your fridge or freezer, they’re all going to be a tasty treat!

Ingredients:
Beef Curry Bites:
8 ounces of lean ground beef
1 whole medium scallion, minced
½ teaspoon sea salt
¼ teaspoon black pepper
½ teaspoon dried garlic powder
½ teaspoon dried curry powder
½ teaspoon ground cinnamon
2 teaspoons dried oregano
Yogurt Sauce:
7 ounces of 2% plain Greek yogurt
2 tablespoons olive oil
1 whole medium scallion, minced
5 fresh mint leaves, minced
½ teaspoon sea salt
¼ teaspoon black pepper
½ teaspoon dried garlic powder
½ teaspoon dried curry powder
½ teaspoon ground cinnamon
Zest from ½ fresh lime


Instructions:

With your hands, gently combine all of the beef curry bite ingredients and form 8 rectangular meatballs about 2” in length. Set aside.

Heat a cast-iron skillet to high heat and when very hot, place each beef bite on the skillet and sear for about 1 minute each side, rotating 4 times in total.

While the beef is cooking, mix all yogurt sauce ingredients together until well-combined.

Serve between 4 with yogurt sauce and optional salad, storing any leftovers in the fridge for up to 3 days.
