Beef Meatballs over Zoodles

Serves 3

A simple dish of fresh zucchini made into “zoodles” and plump meatballs is nourishing and satisfying for any meal of the day. Make this to enjoy with loved ones or to have throughout the week. Add your favorite Keto-friendly sauce or enjoy just as it is!

Prep Time: 10 minutes
Cooking Time: 25 minutes

Ingredients:

Zoodles:
3 medium zucchinis, shaved into “zoodles” (or 3 cups prepared “zoodles”)
Meatballs:
12 ounces of ground beef
1 large egg
2 tablespoons almond flour
1 teaspoon sea salt
½ teaspoon cracked black pepper
2 garlic cloves, peeled & minced

Instructions:

Preheat oven to 400 degrees Fahrenheit.

Place zoodles in a bowl and set aside to be sautéed later.

In a bowl, mix ground beef, egg, almond flour, sea salt, black pepper and garlic until well-combined. Form into 6 large meatballs.

Heat a cast-iron skillet to high heat and sear each meatball for 1 minute per side.

Remove from the stove and place in the oven to finish cooking for 15 minutes.

Remove from the oven and place on a plate. Add the zoodles to the cast-iron skillet and sauté on medium heat until soft, about 5 minutes.

Serve between 3, garnishing each plate with a tablespoon of olive oil and saving any leftovers in the fridge for up to 3 days.
