Berry Parfaits

This dessert is perfectly sweet from fresh berries, creamy from thick Greek yogurt, all layered on top of a simple walnut crust. Serve this any time of the day for a very special treat.

Ingredients:
Bottom Crust:
½ cup walnuts
1 tablespoon keto-friendly sweetener (Any sugar free sweetener of your choice)
Yogurt:
1 ½ cups full-fat plain Greek yogurt
½ tablespoon keto-friendly sweetener (Any sugar free sweetener of your choice)
½ teaspoon pure vanilla extract
Berries:
1/3 cup fresh raspberries
1/3 cup fresh strawberries
1/3 cup fresh blueberries
½ tablespoon keto-friendly sweetener (Any sugar free sweetener of your choice)
Garnish:
Fresh berries

Instructions:

Pulse crust ingredients together in a food processor until it is fine and crumbly and slightly doughy. Scoop into 2 glasses and press down in each glass with the back of a spoon.

Mix yogurt, any sugar free sweetener of your choice and vanilla together and create a layer on top of each crust.

Pulse the berries and sugar free sweetener of your choice until smooth and layer on top of the yogurt, followed by another layer of sweetened yogurt and a thin layer of berries.

Garnish with a few fresh berries and store in the fridge until ready to serve (or up to 5 days).
