Berry Parfaits

This dessert is perfectly sweet from fresh berries, creamy from thick Greek yogurt, all layered on top of a simple walnut crust. Serve this any time of the day for a very special treat.

Bottom Crust:
½ cup walnuts
1 tablespoon keto-friendly sweetener such as erythritol
1 ½ cups full-fat plain Greek yogurt
½ tablespoon keto-friendly sweetener such as erythritol
½ teaspoon pure vanilla extract
1/3 cup fresh raspberries
1/3 cup fresh strawberries
1/3 cup fresh blueberries
½ tablespoon keto-friendly sweetener such as erythritol
Fresh berries


Pulse crust ingredients together in a food processor until it is fine and crumbly and slightly doughy. Scoop into 2 glasses and press down in each glass with the back of a spoon.

Mix yogurt, erythritol and vanilla together and create a layer on top of each crust.

Pulse the berries and erythritol until smooth and layer on top of the yogurt, followed by another layer of sweetened yogurt and a thin layer of berries.

Garnish with a few fresh berries and store in the fridge until ready to serve (or up to 5 days).
