Broccoli Beef

Serves 4

A classic dish often ordered is made low carb at home with a few simple ingredient swaps! Marinating your meat guarantees each bite is packed with flavor.

Prep Time: 5 minutes
Cooking Time: 20 minutes

Ingredients:

2 tablespoons toasted sesame oil or avocado oil
1 pound of sirloin, diced
½ medium yellow onion, peeled & sliced
1 teaspoon sea salt
½ teaspoon cracked black pepper
2 garlic cloves, peeled & minced
1 tablespoon coconut aminos
2 tablespoons sugar-free teriyaki sauce
2 cups broccoli florets
1 whole scallion, minced

Instructions:

Add oil, sirloin, onion, sea salt, black pepper, garlic, coconut aminos and teriyaki sauce to a sealed plastic bag or a shallow bowl and massage well or toss so that the beef is coated in the marinade. Do this a few hours before you plan to cook or up to overnight.

When ready to cook, heat a cast iron skillet to medium heat and sear the sirloin for about a minute each side. Reduce the heat to medium-low and continue to cook until done to your desired taste. The onions will be cooking, too, allow them to sear and move around a little until they are soft, about 5 minutes.

While beef is cooking, steam broccoli until tender, about 5-7 minutes.

Serve beef and broccoli with minced scallion, storing any leftovers in the fridge in a glass container for up to 3 days.
