Broccoli Cheddar Soup

Serves 4

Get ready for a warm and creamy bowl of Broccoli Cheddar soup that will leave you nourished and feeling well taken care of! A pinch of nutmeg really adds a special flavor to this so don’t skip out if you have this ingredient in your pantry!

Cooking Time: 30 minutes

Ingredients:
1 tablespoon butter
1 medium yellow onion, peeled & chopped
3 garlic cloves, peeled & minced
4 cups broccoli crowns
2 cups chicken stock
2 teaspoons sea salt
1 teaspoon black pepper
Pinch of ground nutmeg
1 teaspoon dried red pepper flakes
1 whole scallion, minced
4 ounces of extra-sharp cheddar cheese

Instructions:

Add butter to a large soup pot and bring to medium-low heat.

Add onion and garlic and sauté until soft, about 5 minutes.

Add broccoli and continue to sauté with the lid on until the broccoli is bright green and gets soft, about 5 minutes.

Season with sea salt, black pepper, nutmeg and red pepper flakes and pour in chicken broth and sauté until everything is very soft, about 15 minutes.

Turn off the heat and stir in the scallion, heavy whipping cream and cheddar cheese.

Transfer to a blender and blend until very creamy.

Serve between 4, with additional cheddar cheese, storing any leftovers in a glass container in the fridge for up to 5 days.
