Chaffles, 3 Ways

These chaffles are a delicious low carb snack that you can whip up quickly so bring out that old waffle maker! We filled ours with bacon, onion and pickle, let us know if you have more ideas so we can enjoy, too!

Prep Time: 10 minutes
Cooking Time: 15 minutes

Ingredients:
2 slices of bacon
¼ cup red onion, peeled & minced
2 slices of dill pickle
Sea salt & black pepper
1 ½ cups shredded mozzarella cheese
Garnish: 1 whole scallion, minced

Instructions:

Place bacon in a cast-iron skillet and bring to medium-low heat and allow to cook until crispy, about 5-7 minutes. Remove bacon from the skillet and place on a plate lined with a paper towel, crumbling it when it cools.

In the same skillet, add minced red onion and sauté in the bacon grease until soft and browned, about 5 minutes. Season with sea salt and black pepper to taste.

Heat your waffle iron to maximum heat.

To make 3 different chaffles, place a quarter cup of shredded cheese on the waffle maker, followed by the crumbled bacon. Place another quarter cup of cheese on top of the bacon and close the waffle maker.

Leave in the waffle maker in the oven for 4 minutes.

Carefully remove each chaffle from the waffle maker and fold in half, allowing it to harden as it cools before serving.

Garnish with scallion and store any leftovers in the fridge in a glass container for up to 3 days.

Repeat this for the onion chaffle and the pickle chaffle.
