Ditch the carb heavy taco shell, and enjoy this cheesy chicken tostada without the guilt!
Prep Time: 5 minutes
Cooking Time: 10 minutes
1 cup grated extra-sharp cheddar cheese
4 ounces cooked and shredded chicken breast
1 slice cooked and crumbled bacon
1 seeded and sliced jalapeño
4 sliced cherry tomatoes
Cilantro for garnishing
Preheat oven to 400 degrees F.
Line a skillet with parchment paper and create a large even circle on top of the paper with the shredded cheese.
Bake cheese until it is melted and begins to bubble about 10 minutes.
Remove from the oven and top with shredded chicken, crumbled bacon, sliced jalapeño, sliced cherry tomato, and fresh cilantro.
Optional: Allow tostada to cool for a few minutes, then wrap over one half over like a half quesadilla!
