Prep Time: 15 minutes
Cooking Time: 15 minutes
2 teaspoons sea salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 large egg
2 cups baby spinach, chopped
1 pound of ground chicken
2 tablespoons coconut flour
1 medium avocado, peeled & diced
Add sea salt, black pepper, garlic powder, egg and baby spinach to a mixing bowl and stir together.
Add ground chicken and gently mix until the spices and spinach are evenly mixed into the chicken. Gently mix in the coconut flour, followed by the avocado.
With your hands, form chicken mixture into 4 patties, about 1” thick.
Heat up an outdoor grill or indoor grill pan set to medium-high heat. When very hot, place each patty on the grill (or pan) and do not move once they are set.
Allow to sear and form dark grill lines for about 6 minutes per side.
Remove from the heat and serve between 4, with additional spinach and radicchio leaves, storing any leftovers in an airtight container in the fridge for up to 3 days.
