Chicken Salad with Caesar Dressing

Keep a can of chicken breast in your pantry for times when you need to whip up a quick salad like this one prepared with fresh scallion and parsley and given extra bursts of flavor with green olives and Caesar dressing. We served ours with celery sticks, but cucumber or in an avocado half would also be delicious!

Ingredients:

2 tablespoons of olive oil
1 teaspoon of sea salt
½ teaspoon of black pepper
10 green olives
2 medium celery stalks, diced
1 whole scallion, minced
12 cup fresh parsley, minced
2 tablespoons bottled Caesar dressing
1 12-ounce can of chicken breast, drained

Instructions:

Add all ingredients except canned chicken to a large mixing bowl and toss together until well-combined.

Fold in chicken breast.

Serve with celery sticks, storing any leftovers in a glass container in the fridge for up to 3 days.
