Got some leftover chicken breast in your fridge? Then whip up this fast and easy recipe for Chicken Salad with Pecans! Cleansing, crunchy and with a pop of flavor from capers, you’ll be baking up some chicken just to make this one!

Ingredients:
2 tablespoons of mayonnaise
1 teaspoon yellow mustard
1 whole scallion, minced
¼ cup parsley, minced
Pinch of sea salt
Pinch of black pepper
1 teaspoon dried dill
Zest from ½ fresh lemon
6 ounces of leftover boneless & skinless chicken breast, chopped
4 medium celery stalks, diced
2 tablespoons capers, drained
¼ cup chopped pecans
2 cups mixed greens
Instructions:
Add mayonnaise, minced scallion, minced parsley, sea salt, black pepper, dried dill and lemon zest in a large mixing bowl and toss with a baker’s spatula.
Fold in chicken breast, celery, capers and chopped pecans.
Serve over mixed greens, storing any leftovers in the fridge for up to 3 days.
