This recipe has two of our favorite things---chocolate and cheese! It’s low in carbs so you will feel great after having this as a special treat! Extra sharp cheese is dryer than most cheeses so it’s a great choice to use as your “popcorn”. Feel free to use varieties of cheese except mozzarella which is very high in water.

4 ounces extra sharp white cheddar cheese
4 ounces extra sharp yellow cheddar cheese
2 cups Keto-friendly chocolate chips
To prepare your Keto popcorn, crumble your extra sharp cheddar cheese with your fingers and lay out on a piece of parchment paper in a single layer.
Cover with a clean towel and allow to dry for at least 24 hours and up to 72 hours.
Once very dry, prepare your chocolate by melting the chips in a microwave-safe bowl for 30-second intervals, stirring after each interval, until completely melted. Stir very well.
Spread melted chocolate on a piece of parchment paper in a thick layer.
Sprinkle with crumbled dry cheese.
Allow to cool completely before breaking up into pieces with your hands.
Store any leftovers in a glass container for up to 7 days.
