We love this crisp coleslaw that we can whip up in advance and enjoy added to a few meals throughout the week. Collagen powder increases the protein and healthy fats in this keto salad that we know all of our vegan friends will appreciate, too because we swapped oil instead of mayonnaise!

2 tablespoons olive or avocado oil
2 tablespoons fresh lime juice
2 scoops keto-friendly collagen powder
1 teaspoon sea salt
½ teaspoon black pepper
1 whole scallion, minced
¼ cup fresh parsley, minced
¼ cup chopped walnuts
4 cups shredded cabbage
Mix all ingredients except cabbage in a large bowl until very well combined.
Gently fold in shredded cabbage until it is coated by the oil mixture.
Store any leftovers in the fridge for up to 7 days.
