This comforting meal is easy to create since it’s all prepared in a single skillet and we’re loving that since we’ve been cooking more on Keto! Traditional heavy cream and dairy is replaced with almond milk so whip this up for anyone who needs to avoid dairy, we know they’re going to be asking you to keep making it!
Prep Time: 5 minutes
Cooking Time: 20 minutes
2 tablespoons ghee or butter
1 medium yellow onion, peeled & chopped
4 garlic cloves, peeled & minced
1 pound of ground beef
4 cups green beans
1 cup plain & unsweetened almond milk
1 teaspoon sea salt
½ teaspoon black pepper
Pinch of ground nutmeg
2 tablespoons nutritional yeast
1 tablespoon coconut aminos
1 whole scallion, minced
Add ghee or butter to a skillet set to medium heat.
Add onion and garlic and allow to sear in the pan until the onion is soft, about 5 minutes.
Add ground beef and mince with a wooden spoon and allow to brown, about 10 minutes.
Add green beans and toss well with the beef mixture.
Add almond milk, sea salt, black pepper, a pinch of ground nutmeg, nutritional yeast and coconut aminos and reduce heat to low and allow to simmer until the almond milk has thickened into a creamy sauce, stirring occasionally for about 5 minutes.
Remove from the heat and serve between 4, garnishing with minced scallion, storing any leftovers in the fridge for up to 3 days.
