This simple recipe requires no cooking, just an appetite for some fresh, cleansing cucumber and grounding fats found in sour cream and avocado oil. Dill sprigs add so much flavor to this recipe, if you can’t source fresh use dried!

½ cup full-fat sour cream
2 tablespoons avocado oil
½ teaspoon sea salt
¼ teaspoon black pepper
Zest from ½ fresh lemon
4 fresh sprigs of dill, minced
1 large English cucumber, diced
Mix sour cream, avocado oil, sea salt, black pepper, lemon zest and dill together.
Add cucumbers and toss to coat.
Store any leftovers in the fridge in a glass container for up to 5 days.
