If you’ve got a can of pumpkin puree in your pantry, this is your recipe! We combined staples such as onion and garlic with chicken and smoked paprika and then stirred in creamy classic pumpkin to create this warm and nourishing dish. Be sure to use unsweetened canned pumpkin to keep this meal keto.

4 tablespoons ghee or butter
½ yellow onion, peeled & chopped
1 teaspoon sea salt
½ teaspoon garlic powder
¾ pound of boneless & skinless chicken tenders, chopped
1 ¾ cups canned pumpkin puree
1 teaspoon smoked paprika
Add 2 of the 4 tablespoons of ghee or butter to a cast-iron skillet and bring to medium-low heat.
Add chopped onion, sea salt and garlic powder and sauté until the onion is soft, about 5 minutes.
Add chopped chicken tenders and sauté until the chicken is completely cooked through, about 15 minutes.
Stir in canned pumpkin, smoked paprika and the remaining 2 tablespoons of ghee or butter.
Remove from heat and serve between 4, storing any leftovers in the fridge for up to 3 days.
