These little tuna stacks are tasty to have around the next time you are sharing an afternoon in with a friend so whip up a batch and get ready to treat yourself to a healthy bite, now all you need to do is decide how you’re going to relax and have fun!

Ingredients:
1 5-ounce can of tuna packed in water, drained
2 tablespoons mayonnaise
¼ red bell pepper, seeded and diced
1 whole scallion, minced
¼ cup fresh parsley, minced
½ teaspoon dried dill
½ teaspoon sea salt
¼ teaspoon black pepper
1 cup of cucumber slices
Instructions:
Gently toss tuna salad ingredients together in a bowl and serve between two cucumber slices or on top of single slices, storing any leftovers in the fridge for up to 3 days.
