These hot “sammies” are so tasty that you’ll want to keep this on your regular rotation so stock up on that eggplant! We used a variation of prosciutto, turkey and pastrami, but branch out and use chicken, roast beef and ham, too!

1 medium eggplant, sliced in ½” discs
2 tablespoons of mayonnaise
½ teaspoon smoked paprika
2 slices prosciutto
2 slices deli turkey
2 slices deli pastrami
2 slices of sharp cheddar cheese
1 teaspoon dried basil
8 cherry tomatoes
Preheat your oven to 400 degrees Fahrenheit and eggplant slices on a baking tray lined with parchment paper until soft, about 15 minutes.
When eggplant is done, remove from the oven and layer 6 slices with a teaspoon each of mayonnaise, followed by one slice of meat, 1/3 slice of cheddar cheese, halved cherry tomatoes and a sprinkle of dried basil.
Bake in the oven until the cheese begins to bubble, about 10 minutes.
