When you want a cleansing salad, make this your go-to! We topped a bowl of lettuce with parsley and micro greens, then added crunchy fennel and juicy clementines. Creamy avocado and more crunchy nuts and seeds make this salad a satisfying pop of flavor and texture and since it’s meat and dairy-free, it’s perfect to make for all of your vegan buddies!

3 cups mixed salad greens
1 cup micro greens
10 sprigs of fresh parsley
2 clementines, peeled, segmented & sliced horizontally
1 medium fennel bulb, outer layer removed, then sliced
1 medium avocado, peeled & sliced
1 teaspoon sea salt
½ teaspoon black pepper
2 tablespoons walnuts
1 tablespoon hemp seeds
1 teaspoon sesame seeds
Arrange mixed greens, micro greens and parsley sprigs in a salad bowl.
Layer with clementines, fennel and avocado.
Sprinkle sea salt and pepper over entire salad, followed by walnuts, hemp seeds and sesame seeds.
Serve with olive oil and balsamic vinegar, storing any leftovers in the fridge for up to 5 days.
