Chicken salad is always a go-to when it comes to quick, easy, and affordable meals! The blueberries add an amazing sweet flavor that everyone is sure to love!
Prep Time: 10 minutes
2 tablespoons of mayonnaise
1 whole scallion, minced
Pinch of sea salt
Pinch of black pepper
1 tablespoon dried Italian herbs
1 teaspoon apple cider vinegar
1 12-ounce can of chicken breast, drained
4 radishes, diced
1 medium celery stalk, diced
¼ cup fresh blueberries
4 cups baby kale
OPTIONAL: a few fresh parsley sprigs
Add mayonnaise, minced scallion, sea salt, black pepper, dried Italian herbs, and apple cider vinegar in a large mixing bowl and toss with a baker’s spatula.
Fold in chicken breast, radishes, and blueberries.
Serve over baby kale with optional fresh parsley.
Tip: prep two lunches to take to-go by adding the chicken salad to two glass storage containers. When ready to serve, toss with 2 cups of baby kale each and optional fresh parsley.
