Fried Cabbage & Avocado Salad

Got a bunch of cabbage in your fridge that you need to use up? Try this recipe for Fried Cabbage & Avocado Salad! It’s the perfect combo of sweet and salty and soft and crunchy, we’re going to be making this on the reg, we know you’re going to love, too!

Prep Time: 5 minutes
Cooking Time: 25 minutes

Ingredients:

2 slices of bacon
4 cups chopped green cabbage
1 tablespoon avocado oil
1 teaspoon sea salt
½ teaspoon black pepper
1 teaspoon garlic powder
¼ cup fresh cilantro, minced
1 medium avocado, peeled & diced

Instructions:

Heat a skillet set to medium heat. Add bacon and allow to cook until crispy, about 4 minutes per side. Set aside and when cool, crumble.

Reduce heat to medium-low and with the bacon grease still in the skillet, add the chopped cabbage, avocado oil, sea salt, black pepper and garlic powder.

Sauté in the skillet, stirring occasionally, until the cabbage is soft, about 15 minutes.

Remove from the stove and stir in shredded carrot, minced cilantro and chopped avocado.

Serve between 4, storing any leftovers in the fridge for up to 3 days.
