Greek Chicken Meatballs

Serves 4 (20 meatballs)

These tasty pops of protein and healthy fat are wonderful served in a big salad of spinach, cauliflower rice, cucumbers, cherry tomatoes and fresh herbs. Garnish it all with full-fat Greek yogurt or sour cream seasoned with sea salt, black pepper, fresh dill, parsley, mint, and lemon zest.

Prep Time: 10 minutes
Cooking Time: 20 minutes

Ingredients:
1 pound ground chicken
1 teaspoon sea salt
½ teaspoon black pepper
3 medium garlic cloves, peeled & minced
1 teaspoon ground cumin
1/2 teaspoon dried red pepper flakes
¼ cup fresh dill, minced
¼ cup fresh mint, minced
¼ cup fresh oregano, minced
¼ cup red onion, peeled & minced
½ teaspoon fresh lemon zest


Instructions:

Preheat the oven to 400 F (200 C).

Mix all of the ingredients together with a spoon or with your hands, until everything is well-combined.

Use your hands to form 20 balls, making sure they are the same size (about 1 ½” in diameter).

Place on a baking tray and bake in the oven for 10 minutes. Flip, then continue baking for 10 more minutes.

Serve between 4, storing any leftovers in an airtight container in the fridge for up to 3 days.
