We love the extra crunch that a big scoop of cucumber salsa gives this guacamole so we’re making it up all the time to serve with our favorite Keto and low-carb veggies, to top grilled meats and to add to a batch of fried eggs and bacon!

1 tablespoon fresh lime juice
Zest from ½ fresh lime
3 small avocados, peeled and mashed
1 teaspoon sea salt
½ teaspoon garlic powder
¼ cup cucumber slices, minced
1 whole scallion, minced
¼ cup fresh cilantro, minced
½ medium tomato, diced
Gently mix your mashed avocado in the lime juice and lime zest until well combined. Fold in sea salt and garlic powder.
Mix your cucumber salsa ingredients together and fold in ½ of it into the avocado mixture. Add 1 of the avocado pits to the mixture to help prevent the guacamole from oxidizing (the lime juice will help with this as well!).
Add the rest of the salsa as a garnish to the guacamole.
Serve with your favorite Keto and low-carb veggies such as bell pepper slices, radish, celery and cucumber.
Store any leftovers in a glass container in the fridge for up to 3 days.
