These baked Ham & Cheese Egg Muffins offer a punch of flavor and a pack of protein and healthy fats in each bite. They are perfect to serve to your family or a few friends and very nice to make in advance and enjoy throughout the week!

Ingredients:
4 tablespoons butter, melted
8 large eggs
1 teaspoon sea salt
½ teaspoons black pepper
6 ounces sliced deli ham, chopped
12 tablespoons shredded sharp cheddar cheese
2 medium scallion, white ends removed & green parts only, minced
Instructions:
Preheat the oven to 350 degrees Fahrenheit.
Crack eggs into a mixing bowl and whisk with sea salt and black pepper.
Line 12 muffin cups in a muffin tin with cupcake liners (we love using silicone liners). Place a heaping spoonful of chopped ham in each liner (about 1/3 full) followed by egg mixture so that each liner is about 2/3 full.
Place a tablespoon of shredded cheese on top of each muffin, followed by a sprinkle of minced scallion. Your muffin cups will be just about full at this point.
Bake for 15 minutes, or until the eggs have set and each muffin has risen a bit.
Remove from the oven and garnish with the remaining ½ of the minced scallion.
Allow to cool for 5 minutes before removing from the tin, storing any leftovers in an airtight container for up to one week.
