Ice-Cream Cake

Have you tried our delicious Meal Bars yet? We are enjoying our Mint Chocolate Chip Meal Bars crumbled into a delicious ice-cream cake! If you have fresh mint, use it to garnish your cake, not only will it taste amazing, but mint aids in better digestion!

Ingredients:
3 cups store-bought Keto-friendly vanilla ice-cream
1 ½ cups full-fat sour cream
4 Real Ketones Mint Chocolate Chip Meal Bars
¼ cup Keto-friendly chocolate chips, melted
Optional: Fresh mint leaves, minced

Instructions:

Remove your ice-cream from the freezer and place on the counter to thaw for about 15 minutes.

While the ice-cream is thawing, pulse Real Ketones Mint Chocolate Chip Meal Bars until crumbly and set aside.

When soft enough to spoon the ice-cream out easily, spoon 3 cups of ice-cream into a food processor.

Pulse ice-cream with sour cream until very creamy.

Pour half of the ice-cream mixture into a bread pan-sized baking dish.

Sprinkle half of the Real Ketones Meal Bars over the ice-cream. Spread the remaining half of the ice-cream over the layer of crumbled Meal Bars, followed by the remaining half of crumbled Meal Bars.

Drizzle melted chocolate chips over the top of the cake, and garnish with optional fresh mint leaves.

Store any leftovers in a glass container in the freezer for up to 1 week.
