Joe & The Juice Copycat Tuna Sandwich

We took an Internet sensation and made it deliciously Keto! Let us know what you think when you make this ultra savory tuna sandwich with pesto, avocado, tomato, and chipotle mayo! 


Prep Time: 15 minutes 

Cooking Time: 0 minutes 


Ingredients:

½ medium avocado, peeled & mashed 

10 cherry tomatoes, quartered

Tuna Salad:

2 5-ounce cans of tuna packed in water, drained

1 teaspoon sea salt

½ teaspoon black pepper

¼ cup mayonnaise

2 slices jalapeno pepper, seeds removed

1 tablespoon red onion, minced

2 teaspoons yellow mustard

1 tablespoons fresh lemon juice

¼ batch of Pesto (see below)

Ingredients:

2 cups fresh basil leaves

Juice and zest from ½ medium lemon

1 teaspoon sea salt

1 medium garlic clove

½ cup pine nuts

¼ cup grated parmesan cheese

¼ cup olive oil

Instructions:

Pulse all ingredients in a food processor until creamy and well-combined. 

Quick Keto Microwave Bread (see below, makes 4 thin slices of bread) 

Ingredients:

2 tablespoons butter or ghee, melted

2 large eggs

½ teaspoon raw apple cider vinegar

2 teaspoons plain & unsweetened almond milk

2 tablespoons coconut flour

¼ teaspoon baking soda

Instructions:

Mix all ingredients together. Pour ½ of the batter into a bread-sized microwave dish and microwave for 1.5 minutes. Check to see that the batter has formed into bread. If it’s not cooked all the way through, continue microwaving for 15 seconds at a time until it is done. Remove from the microwave and flip the dish upside down to pop out the bread. When it has cooled, slice it in halves, so that you have two slices of thin bread. Continue with the remaining half of the batter to make two more slices of thin bread.

Instructions:


Add the tuna salad ingredients together to a food processor and pulse until very creamy and well-combined. 


Layer 1 thin slice of bread with pesto and avocado, followed by chopped tomato. Layer a second piece of thin bread with chipotle mayonnaise. Add half of the tuna salad and put it all together like a sandwich. Repeat with the second sandwich. 


Store any  leftovers in an airtight container on the countertop for 3 days.
