Keto Acorn Squash Bowls

This Fall, make sure to bake a whole acorn squash filled with yummy butter, pecans and maple syrup! These make a delicious side dish for a weeknight dinner or for a holiday get together!

Cooking Time: 30 minutes
Ingredients:
1 acorn squash
Avocado oil spray
Sea salt
Black Pepper
3 tablespoons butter
4 tablespoons chopped pecans
Instructions:
Preheat your oven to 450 F (230 C) and line a baking tray with parchment paper.
Spice acorn squash in half, vertically, and remove the seeds.
Place on the baking sheet and spray with avocado oil. Season with a sprinkle of sea salt and black pepper.
Bake in the oven for 30 minutes, or until very soft and the edges have begun to brown. Turn off the oven.
Remove from the oven and fill the cavities with equal amounts of butter and chopped pecans.
Place back in the oven for the butter to melt and the pecans to slightly toast, about 3 minutes.
Remove from the oven and use a spoon to baste the edges of the squash with the melted butter. Drizzle with Keto maple syrup.
Serve between 2, storing any leftovers in the fridge in an airtight container for up to 5 days.
