Keto Asparagus & Creamy Guac Salad

Keto is easy when you build a salad with greens, whatever protein you have on hand, low carb veggies and a big scoop of this creamy guac that takes just seconds to whip up! Make this extra fancy with some grated lemon zest, fresh parsley or an extra drizzle of olive oil.

Prep Time: 5 minutes
Cooking Time: 10 minutes if grilling or steaming asparagus

2 cups of baby kale
2 tablespoons of mayonnaise
1/2 medium avocado, peeled
1 cup asparagus
2 slices deli turkey
1 medium radish, sliced


If grilling asparagus, place on a grill pan set to high heat and allow to sear until soft with lines, about 10 minutes. If steaming, steam until desired softness is reached, about 7-10 minutes.

Arrange baby kale in a bowl, followed by asparagus, sliced turkey and radish.

Mash avocado and mayonnaise together and serve on top of your salad.
