We’re loving bagels again, only this time, without the carb crash! These are wonderful served with cream cheese, and amazing toasted with added avocado and cheddar cheese!
Prep Time: 10 minutes
Cooking Time: 20 minutes
Ingredients:
2 large eggs
1 cup shredded mozzarella cheese
2 tablespoons plain cream cheese
1 ¼ cups almond flour
1 ½ teaspoons baking powder
1 tablespoon everything bagel seasonings OR sesame seeds
8 tablespoons plain cream cheese for serving
Instructions:
Preheat your oven to 400 degrees Fahrenheit.
Melt shredded cheese and cream cheese in a microwave-safe bowl and stir very well to combine.
Mix 1 egg, almond flour and baking powder in a large mixing bowl, making sure there are no clumps.
Pour in melted cheese and stir well to combine.
Form 4 balls with your hands and place on a baking sheet lined with parchment paper. Flatten a bit with your hand and form a hole in the center of each ball with your thumb to create a traditional bagel shape.
Brush each bagel with the remaining egg.
Sprinkle sesame seeds on each bun.
Bake in the oven for 17-20 minutes or until golden.
Remove from the oven and allow to cool for a few minutes before slicing in half and serving with additional cream cheese.
Storing any leftovers in the fridge for up to 5 days.
