Keto BBQ Ranch Pork Salad

Serves 4

Keep ground pork in your regular grocery repertoire to cook up fast, seasoning with spices, herbs and sauces you have on hand. We combined BBQ sauce and ranch dressing in this recipe to create a salad bursting with flavor. For even more fat, add some blue cheese or avocado!

Cooking Time: 20 minutes

4 slices of bacon
1 pound of ground pork
1 teaspoon sea salt
½ teaspoon cracked black pepper
2 garlic cloves, minced
2 medium zucchinis, ends removed and chopped
¼ cup BBQ sauce
½ cup ranch dressing
8 cups mixed greens
½ cup parsley, chopped


Preheat your oven to 350 degrees Fahrenheit and cook bacon on a baking tray lined with parchment paper until crispy, about 10 minutes. Set aside and allow to cool. Once cool, chop into bite-sized pieces.

Add ground pork to a large skillet set to medium-low heat.

Sauté, mincing with a wooden spoon, with sea salt, black pepper and garlic cloves until it is cooked through, about 10 minutes. Drain excess fat.

Add chopped zucchini to the ground pork and continue to sauté until it is soft, about 5 minutes.

Stir in BBQ sauce and ranch dressing.

Serve pork mixture over mixed greens and garnish with crumbled bacon.
