Keto Beef & Pork Meatloaf

Serves 4

A traditional favorite gets a Keto-update by adding ground walnuts instead of carb-heavy bread, making this meatloaf extra savory. We love this served with our Whipped Cauliflower with Goat Cheese, so be sure to check out that recipe as well!

Cooking Time: 1 hour


8 ounces of ground beef
8 ounces of ground pork
2 large eggs
1 teaspoon sea salt
½ teaspoon cracked black pepper
2 garlic cloves, peeled & minced
¼ cup fresh parsley, chopped
1 whole scallion, minced
¼ cup chopped walnuts, crushed
6 tablespoons ketchup (preferably with no added sugars)


Preheat oven to 350 degrees Fahrenheit.

Mix all ingredients (but just one half of the ketchup, or 3 tablespoons) with your hands until very well combined.

Form into a loaf with your hands and place on a cast-iron skillet. Cover the loaf with the remaining 3 tablespoons of ketchup, spreading it evenly until it is all covered.

Bake in the oven until the meat is cooked through, about 40 minutes.

Remove from the heat and allow to cool for a few minutes before slicing.

Storing any leftovers in the fridge for up to 3 days.
