Keto Bell Pepper Fried Eggs

What’s more fun than these fried eggs inside bell pepper “flowers”? Simple to make and a creative surprise for little ones, make a big batch of these and enjoy with loved ones or throughout the week, they save and reheat nicely!

Prep Time: 3 minutes
Cooking Time: 5 minutes

Ingredients:
1 tablespoon ghee or butter
1 bell pepper (red, orange, green or yellow), seeded & sliced in round “flowers”
3 large eggs
Sprinkle of sea salt & black pepper
Fresh cilantro sprig

Instructions:

Heat a non-stick skillet to medium heat. Add ghee or butter and bell pepper “flowers” and allow to heat until soft, about 3 minutes.

Crack eggs into each bell pepper “flower”, sprinkle with sea salt and black pepper, and cook, without moving, with the lid on for about 2 minutes, or until the egg whites have set.

Remove from the heat and serve on a plate with fresh cilantro.

Store any leftovers in a glass container in the fridge for up to 3 days.
