2 large eggs
½ cup almond flour
½ teaspoon baking powder
¼ teaspoon sea salt
3 tablespoons heavy whipping cream
1 tablespoon butter, melted
1 tablespoon butter
8 tablespoons full-fat sour cream
16 bite-sized pieces of smoked salmon
4 teaspoons capers
Fresh dill sprigs
Black pepper to taste
Separate your egg yolks from the whites.
Combine the egg yolks, almond flour, baking powder, sea salt, heavy whipping cream and melted butter and stir well to combine.
Beat the egg whites in a separate bowl with an electric hand mixer or standing mixer until very fluffy.
Gently combine egg whites with the batter.
Add remaining butter to a large skillet set to low heat. Spoon heaping teaspoons of batter into the skillet and fry on low heat for about 45-50 seconds per side, or until golden. Repeat with all of the batter, or about 16 times.
Set finished blinis aside until ready to top with sour cream, smoked salmon, capers, fresh dill and black pepper.
Serve between 8, storing any leftovers in an airtight container in the fridge for up to 3 days.
