Keto Breakfast Sammies

Serves 2

These Breakfast Sammies are a treat to have with coffee and loved ones. You’ll need a Mason jar lid or round metal cookie cutter for this recipe to create your egg “buns”.

Prep Time: 15 minutes
Cooking Time: 15 minutes

Ingredients:
4 slices of bacon
4 large eggs
1 teaspoon sea salt
½ teaspoon black pepper
2 1-ounce slices of extra sharp cheddar cheese
2 tablespoons mayonnaise
4 fresh basil leaves

Instructions:

Cut bacon strips in half and fry in a skillet on medium-low heat until crispy to your liking, about 5-7 minutes. Reserve bacon grease in the skillet.

Whisk eggs in a bowl and season with sea salt and black pepper.

With the heat still set to medium-low, place 2 Mason jar lids or metal cookie cutters in the skillet and without them moving, carefully pour egg mixture into each round and place a lid on the skillet.

Allow eggs to cook in the rounds until fluffy, about 3-4 minutes.

When cooked through, remove from the skillet and create sandwiches with the egg “buns”, filling with mayonnaise, bacon, cheese and fresh basil.

Serve between 2, storing any leftovers in an airtight container for up to 3 days.
