Keto Broccoli Mash with Butter

Serves 4

Butter makes everything better including this pureed batch of broccoli, scallion and garlic! Use this recipe as a template for all of your favorite low carb veggies, example, subbing in spinach or cauliflower for the broccoli, and you’ll have lots of keto options that everyone is sure to love.

Prep Time: 5 minutes
Cooking Time: 20 minutes


6 tablespoons of butter
2 whole scallions, minced, white & green parts separated
1 clove of garlic, peeled and sliced
2 teaspoons sea salt
½ teaspoon black pepper
4 cups of broccoli florets


Add 1 tablespoon of butter to a sauté pan and place on the stove set to medium-low heat.

Add the white parts of the minced scallion and garlic to the pan and toss with sea salt and black pepper.

Sauté until the scallion begin to soften, about 2 minutes.

Add the broccoli florets and green parts of the scallion, cover with a lid, and simmer until everything is soft, stirring occasionally, about 10 minutes.

Remove from the heat and transfer to a blender or food processor, along with 1 more tablespoon of butter.

Blend on high until everything is creamy and well-combined.

Serve between 4 with a tablespoon of butter for each portion.

Store any leftovers in a glass container in the fridge for 3-5 days.
