These warm and sweet pecans will be a delicious keto snack in between meals, or do what we’ve been enjoying and serve them over a hearty salad or in your favorite keto oatmeal recipes. You can increase the heat in these by adding a pinch of cayenne pepper, or make them savory by adding a teaspoon of ground cumin!

8 ounces of raw pecans
4 tablespoons butter
4 tablespoons erythritol
1 teaspoon pure vanilla extract
1 teaspoon sea salt
½ teaspoon black pepper
1 tablespoon ground cinnamon
Preheat your oven to 325 degrees Fahrenheit.
Melt the butter in a glass bowl in the microwave or in a small saucepan on the stove.
Stir in pure vanilla extract, sea salt, black pepper and ground cinnamon until well-combined.
Gently stir in pecans until fully coated.
Arrange pecans on a baking tray lined with parchment paper in an even layer.
Bake in the oven for 10-15 minutes, checking after 10 minutes to make sure the pecans aren’t burning. Every oven bakes a little differently, so check every minute or so after 10 minutes.
Remove from the oven and serve between 8, storing any leftovers in an airtight container in the fridge for up to 1 week.
