Keto Cheesy Pork Meatballs

Serves 10

Make these ultra-savory meatballs for your holiday gathering. They’re easy to grab with toothpicks inserted into them after they come out of the oven, just wait a few minutes for them to cool before popping them into your mouth!

Prep Time: 10 minutes
Cooking Time: 18 minutes

Ingredients:

1 pound of ground pork
½ cup shredded cheddar cheese
1 large egg
½ cup almond flour
½ cup fresh parsley, minced
2 whole scallions, minced
1 teaspoon sea salt
½ teaspoon black pepper
1 teaspoon garlic powder

Instructions:

Preheat your oven to 350 degrees Fahrenheit.

Add all meatball ingredients to a large bowl and mix well together with your hands or a large spoon.

Form 20 meatballs with your hands (about 1.5” each in diameter) and place on a cast-iron skillet or baking tray lined with parchment paper.

Bake for 15-18 minutes, flipping after 10 with a pair of tongs.

Remove from the oven and let cool a few minutes before transferring to a serving plate.

Serve between 8 with toothpicks inserted into each for easy grabbing, storing any leftovers in the fridge for up to 3 days.
