Ingredients:
Salad:
2 cups mixed lettuce
4 ounces of leftover boneless & skinless chicken breast, sliced
½ red bell pepper, thinly sliced
½ medium avocado, peeled and mashed
1 teaspoon sesame seeds
¼ teaspoon dried red pepper flakes
3-5 fresh mint leaves
1 tablespoon pumpkin seeds
1 teaspoon hemp seeds
Vinaigrette:
2 tablespoons toasted sesame seed oil
1 tablespoon raw apple cider vinegar
1 teaspoon sea salt
½ teaspoon black pepper
1 teaspoon curry powder
¼ teaspoon dried red pepper flakes
¼ teaspoon sesame seeds

Instructions:

Arrange all salad ingredients on a large plate or shallow bowl.

Whisk vinaigrette ingredients and when ready to serve, toss well together.
