6 cups shredded mozzarella cheese
4 ounces plain cream cheese
3 ½ cups almond flour
2 teaspoons baking powder
1 ½ tablespoons white wine vinegar
3 large eggs
Garlic Herb Butter:
4 tablespoons butter
1 teaspoon sea salt
½ teaspoon black pepper
¼ cup fresh parsley, minced
2 whole scallions, minced
2 garlic cloves, peeled & minced
Prepare your dough by preheating your oven to 425 degrees Fahrenheit.
Melt shredded cheese and cream cheese in a microwave-safe bowl and stir very well to combine.
Mix eggs, almond flour, white wine vinegar and baking powder in a large mixing bowl, making sure there are no clumps.
Pour in melted cheese and stir well to combine. You can also use a food processor to combine the melted cheese and flour mixture more easily. Pulse until a dough has formed.
Build your Christmas tree by forming 17 small balls and layering in the shape of a tree and arranging on a baking tray lined with parchment paper.
Bake in the oven for 10 minutes.
While your dough is baking, prepare your Garlic Herb Butter by melting butter and mixing the remaining ingredients in the butter.
After 10 minutes of the dough baking, remove from the over and brush with your Garlic Herb Butter. Continue baking for 5 more minutes, or until golden brown.
Remove from the oven and brush with your Garlic Herb Butter again.
Serve immediately, these are best eaten warm out of the oven.
Store any leftovers in a glass container for up to 7 days, reheating before serving again.
