Keto Copycat Chipotle Chicken Bowls

We created a copycat version of one of our favorite bowls and know you will love it, as well! Feel free to experiment with different ingredients in this recipe, such as replacing cherry tomatoes with your favorite sugar-free salsa, or using your favorite shredded cheese!

Ingredients:
1 pound of leftover boneless & skinless chicken breast, shredded
2 tablespoons avocado oil
1 teaspoon sea salt
½ teaspoon black pepper
1 teaspoon dried garlic powder
1 tablespoon chipotle chili powder
1 tablespoon avocado oil
4 cups riced cauliflower
1 teaspoon sea salt
1 medium scallion, minced
¼ cup fresh cilantro, minced
Juice from 1 medium lime
4 cups Romaine lettuce, chopped
1 cup cherry tomatoes, halved
1 cup shredded sharp cheddar cheese
½ cup full-fat sour cream
1 medium avocado, peeled & sliced
Extra cilantro for serving
Instructions:
Add avocado oil, sea salt, black pepper, garlic powder and chipotle chili powder to a mixing bowl and whisk well. Add shredded chicken and toss until it is coated by the marinade. Set aside.
Add avocado oil and riced cauliflower to a non-stick skillet and bring to medium heat. Saute until it is soft, about 5 minutes. Season with sea salt and stir in the minced scallion, cilantro and lime juice. Set aside.
Build bowls by adding a layer of cauliflower rice, chicken, Romaine lettuce, tomatoes, shredded cheese, sour cream, avocado and cilantro.
Serve between 4, storing any leftovers in an airtight container for up to 3 days.
Serve immediately.
