1 pound of ground turkey
4 tablespoons olive oil
2 tablespoons ghee or butter, melted
½ cup full-fat cottage cheese
1 teaspoon sea salt
½ teaspoon black pepper
½ teaspoon garlic powder
2 tablespoons ghee or butter
1 medium whole scallion, minced
1 tablespoon fresh parsley, minced
Preheat your oven to 350 degrees Fahrenheit.
Gently combine all of the ingredients in a large mixing bowl and form 12 small meatballs with your hands.
Place on a baking tray lined with parchment paper and bake until browned, about 20 minutes, flipping after 10 minutes.
Serve over a bed of veggies, storing any leftovers in the fridge for up to 3 days.
