Creamy mushroom chicken that takes just 15 minutes to prepare?! Sign us up! The trick to keeping this dish fast and easy is to use mayonnaise. It’s thick texture and tangy flavor compliments warm and woody mushrooms really well, give it a try!

1 tablespoon ghee or butter
1 pound chicken breast
2 cups cremini mushrooms, sliced
2 teaspoons sea salt
½ teaspoon black pepper
2 teaspoons garlic powder
½ teaspoon dried red pepper flakes
4 tablespoons mayonnaise
¼ cup parsley, chopped
Place a tablespoon of ghee or butter in a medium-sized skillet set to medium-low heat.
Arrange chicken breasts in the skillet and sprinkle with an even layer of sea salt, black pepper and garlic powder on the side facing up.
Flip after about 5 minutes, add sliced mushrooms to the skillet and sprinkling the opposite side of the chicken and the mushrooms with additional sea salt, black pepper and garlic powder the dried red pepper flakes.
Cover with a lid of a piece of aluminum foil and continue cooking by increasing the heat to medium, until the chicken is cooked through and the mushrooms are tender, about 15 minutes.
Turn off the heat and stir in mayonnaise.
Garnish with parsley.
Store any leftovers in a glass container in the fridge for up to 3 days.
