Ingredients:
Cookies:
1 ½ cups almond flour
¼ cup arrowroot powder
2 tablespoons Keto granular sugar such as stevia
¼ teaspoon of fine sea salt
3 tablespoons chia seeds
1 teaspoon baking powder
⅓ cup coconut oil, melted
1 teaspoon pure vanilla extract
½ teaspoon almond extract
2 tablespoons water
Lemon Blackberry Frosting:
½ cup palm oil
¼ cup Keton confectioners’ sugar
1 packet of Lemon Twist Keto Lean for Life Prime powder
A few drops of natural red food coloring
Blackberry Jam:
½ cup fresh blackberries
1 packet of Lemon Twist Keto Lean for Life Prime powder
Instructions:
Preheat your oven to 325 degrees F (160 C).
To make the cookies, mix the dry ingredients in one bowl and the wet in another. Pour the wet ingredients into the dry and gently mix together until well-combined. If your dough is very dry, add more water, 1 teaspoon at a time.
Scoop the dough into large ice-cream scoop sized balls and place them on a baking tray lined with parchment paper.
Flatten each cookie a little with your hands and make sure the edges are firmly held together, without cracks in the dough.
Bake in the oven for 14-5 minutes, or until just slightly golden in color. Remove from the oven and let them cool completely.
While the cookies are cooling, mix all of the frosting ingredients together very well. Set aside.
To create the blackberry jam, mash the berries up in a bowl with a fork. Stir in the packet of Lemon Twist Keto Lean for Life Prime powder.
Frost each cookie and top with blackberry jam.
Serve between 6, storing any leftovers in a glass container in the fridge for up to 3 days.
