Keto Curried Spinach Marinara

Your favorite store-bought marinara sauce gets an upgrade with ingredients that are likely in your freezer and pantry, such as olive oil, spices and frozen spinach. In just a few minutes, you’ll have a delicious, warm marinara sauce that is bursting with bright flavors!

Cooking Time: 15 minutes

Ingredients:

4 tablespoons olive oil
1 cup frozen spinach
1 garlic clove, minced
1 teaspoon sea salt
1 tablespoon dried curry powder
2 cups marinara sauce

Instructions:

Heat 2 tablespoons of the olive oil in a large skillet set to medium-low heat.

Add frozen spinach and allow to wilt in the pan until it is defrosted, about 3 minutes.

Add minced garlic, sea salt and curry powder and stir well to combine.

Add marinara sauce and stir until everything is very well combined.

Serve with egg, proteins, roasted veggies or keto-friendly chips and crackers.

Store any leftovers in a glass container in the fridge for up to one week.
