This dish has all of the flavors of a traditional macaroni salad but no grains or carbs! Dig in!
Prep Time: 5 minutes
Cooking Time: 10 minutes
Ingredients:
1 cup cauliflower florets
2 tablespoons mayonnaise
½ teaspoon raw apple cider vinegar
1 teaspoon sea salt
½ teaspoon black pepper
1 teaspoon yellow mustard
1 medium celery stalk, diced
¼ medium red bell pepper, minced
1 tablespoon onion, minced
Instructions:
Steam cauliflower florets until soft, about 10 minutes. Allow to cool in the fridge.
Add remaining ingredients to a bowl and stir well.
Toss cooled cauliflower in the dressing until it is fully coated.
Pour into a serving bowl.
Serve between 2, storing any leftovers in an airtight container in the fridge for up to 5 days.
